Stuffed Dinner

Last week when I bought a large number of peppers I actually had a plan in mind (strange for me but true). Hubby tells me all the time I need to plan better when I buy large amounts of produce, so my peppers had a goal, Stuffed Pepper Dinner! The recipe I use comes from our British Cookbook that my mother-in-law got us (I do change things up a bit!)
First thing is cut of the top of your peppers and put them in boiling water for 5 minutes. (I did 1 for me and 2 for Hubby).
While the peppers are boiling cook up 2 cups of rice per the package directions. Then chop half an onion, 4 oz of mushrooms, 2 slices of bacon, and the tops of the peppers.
Add all the veggies to a pan with a little oil and cook until soft. Then add the cooked rice, salt, pepper, and parsley. Remove from heat and add 1 beaten egg to bind the mixture. Fill your peppers and top with cheese (I used parm). Bake in a 350 degree oven for 35-40 minutes. Top with more cheese and serve.
The peppers and filling can also be made ahead of time and put in the fridge. Then just pop in the oven heat and eat! Hubby and I love this nice veggie filled dinner!

  1. My dad used to make stuffed peppers for us all the time as kids...I've never seen them BOILED first, though, only roasted. How fun! [I don't know why that is fun...perhaps because you could say "bubble bubble toil and trouble" while cooking them? :)
