Hubby and I came up with a plan back in January that we wanted to start using our slow cooker more often. So you can imagine how excited I was when one of my Christmas presents was THREE slow cooker recipe books! It was a sign that Slow Cooker Wednesdays need to happen at our house.
We decided that we would start the first Wednesday of the month. So last week, I got my slow cooker ready with the liner, if you do not use these liners yet you must start, they make clean up a breeze! And in the morning I chopped 2 stalks of celery, 1 onion, 1 jalapeno pepper, and 6 ounces of leftover ham. I then added 1 cup frozen corn, 1 can hominy, 1 cup chicken stock, salt, pepper, and thyme and set it to cook while I went to work.
When I got home I mix XXX flour with some milk then add more milk to the pot and cooked for 30 for minutes. Finally we had Double Corn Chowder with a side of bread all with no effort!
yum! i need to use my CP more often too, but its a pain to take out of the closet and find a space on our teeny tiny kitchen.
