British Curry

Well that is what I call it at least. I had never really had or made curry before Hubby and I moved in together. It was a meal he said his mum made a lot so I decided to give it a try.

*I have loved all the things my mother-in-law has had me try so I was not too worried, lamb, Yorkshire puddings, British chocolates, this woman has not led me down any bad food pathsthumbs_up

I asked her for a recipe (she did not really have one, rather a method) so I thought I can do this, and thus it became one of our favorite ways to use veggies and warm up on a cold night. Here is what we do:

Sauté mushrooms and onions in a pan.

Add flour and cook into the mushroom mix.

Add curry powder, as much or as little as you like.

Add stock and simmer it until combined.

Add veggies and cook until tender.

Add stock and curry powder as needed.  *You can also add chicken or another cooked protein here. This time we just had a veggie mix.

Veggies included in our mix here are yellow squash, carrots, cauliflower, peppers, green beans,  and peas. 

Served over rice this is a super easy and healthy meal.
