The question always comes up after Thanksgiving, what do you do with the leftover turkey? Well this year Hubby had an awesome idea, Turkey Pot Pie Filling. We used our chicken pot pie recipe with some changes.
Turkey Pot Pie Filling
1/2 of a red, yellow, and orange pepper sliced
8 ounces mushrooms sliced
16 ounces cooked turkey breast
2 cans cream of celery soup
1 tablespoon parsely
Blanch pepper and mushrooms. Mix chicken, mushrooms, pepper, soup and parsley.
We decided to switch up the peppers (well really they had a huge bag of red, yellow, and orange at Costco and I was there so it made sense) which I think added a nice color to the pot pie.
The rest of the mix was added and here it is. Although it does not look great, I do love this recipe for easy weeknight dinners.
