What do you do with leftovers?

After a lovely time with both sides of the family, Hubby and I came home with a lot of extra food. I am not sure how that always happens to us but it does. I feel like we come home with twice as much as we left with. So what should I make with these items? Well a Veggie filled Beef Stir Fry seemed like the perfect fix.

Here is what I used:

I used canned mushrooms, sliced beef tenderloin, frozen mixed vegetables, frozen green beans, frozen peas, onion, garlic, and bell pepper. All served on top of couscous.

First place a little oil (peanut if you have it) in a pan and cook the onion, garlic, and pepper. I then added the other veggies with a little rice wine vinegar and soy sauce. I seasoned the beef with a little cayenne pepper and mustard powder then added that into the pan as well. Finally cook the couscous as directed and serve.

Lovely veggie filled meal and some of the leftovers are gone. What do you do with leftovers?

  1. i try to eat leftovers when possible but the people i feed are so picky...they wont eat day old food most times and because we are asian i make a lot of rice and they refuse to eat day old rice...such picky people.

    i recently picked up peanut oil and im looking forward to trying it.
