Hubby was away last weekend, which meant I was on my own for dinner! This is actually something I quiet enjoy. Although Hubby is pretty good about trying things, there are something that I know he will just not like. The Wegmans by us does these $6 meals that they have been advertising for quiet some time, but we have not tired them because Hubby could not find an entrée he liked
So while he was gone, I took the coupon I had and got my free $6 meal.
Eggplant Rollettes with Seasoned Tomato Sauce, Artichoke & Asiago Croquette, and Sautéed Broccoli Rabe.
This meal was incredible. The eggplant was nice and light, the croquette was crisp and the broccoli rabe was tender. If you have a Wegmans near you, I would recommend checking out these great and easy meals!
I sadly DON'T have a Wegman's, but I love visiting when I am back east!
