Grains Side Salad

I love taking recipes I find and changing them based on what I have on hand. This is based on this recipe from Martha Stewart Living. I used couscous in this salad, but the recipe calls for barley which I think would be nice too.

For this salad take 8-10 mushrooms and cook them for 5 minutes in a skillet on high with 1 tablespoon oil. Let cool then slice. Whisk together 1/4 cup oil, 2 tablespoons red wine vinegar, 1 teaspoon Dijon mustard, salt, and  pepper. Add mushrooms, 1 grated carrot, 1/2 an onion chopped, and parsley. Serve cold.

This salad made a nice and easy side dish to our dinner the other night and had both our starch and veggies in it.
