Black Bean and Corn Salsa

After our awesome produce delivery before the Super Bowl, Hubby and I knew we needed to make some salsa! Hubby loves black bean and corn salsa so he looked up a recipe and we used this as a guide.

1  can black beans, rinsed and drained
11 oz. whole kernel corn (we used frozen and filled the black bean can)
1 t minced fresh jalpeno pepper
2 medium tomatoes, chopped
1/3 c. chopped fresh cilantro (or subst. 1 t dried cilantro)
1/4 c. diced onion
1/4 c. fresh lime juice (about 2 limes, squeezed)
1 t. salt

We mixed it all together then popped it in the fridge on Saturday night. By game time it was all set to go and tasted amazing. We might not be buying salsa in our house anymore!
