One Delicious Weekend

This past weekend was really great food-wise. I ate everything I wanted and did not feel stuffed at all, this is a big win for me. I will not list all the yummy goodness (mainly because I did not take picture of it) but I will share some highlights.

Friday night Hubby and I had some friends over for a BBQ and we had tons of veggies, shrimp, beef, and chicken. We started with some snacks, including the Whole Food hummus and pita chips and cheese.
 I only had a taste of the hummus and pitas. Hubby wanted to share his presentation on the veggies!

Green and yellow squash, mushrooms, red and green pepper, and tomatoes on kabobs.

Saturday night was dinner at my parent's house to see the new pool table they got. I ate mainly veggies and save room for cheesecake. Mom made a recipe she has had for years but never made for me and it was AWESOME! The walnut graham cracker crust was so good.

(This is actually the piece I took home to have on Sunday!).

Sunday breakfast was an awesome bowl of oats before I headed out for a Solixir Demo.
The mix:
1/2 cup Oats
1 cup water
Cinnamon
1 big spoonful cottage cheese
1 spoonful PB
Grapes

Sunday afternoon Hubby and I knew we need to do something with all the veggies we had (my aunt gave us some from her garden). What to do with extra veggies....Veggie Chili  OF COURSE!

Veggies set to go:

 Recipe:
1 lb onion chopped
2 garlic cloves
Oil
 2 lb chopped veggies (we used eggplant, zucchini, yellow squash, carrots, red pepper, and mushrooms)
1 tsp parsley
1 tsp cumin
1/2 tsp chili powder
1 cans kidney beans
4 oz tomato pasta
28 oz crushed tomatoes
4 oz Bulgar wheat
4 cups stock

We increased the veggies this time because we only had 1 can of beans, should still taste awesome. 
Cooking then all set to go in the freezer (mainly because we still have more veggies to eat.....)

Dinner was leftover food from our BBQ that we turned into fajitas.

This was the station hubby set up to make them for us. Mine had the shrimp and a ton of veggies as well as some hummus we decided to use.

The weekend had some workout as well, yoga on Saturday and a great ab workout on Sunday. Although the scale still seems to be about 3-5 lbs above the point I like it at, I think I am going to let that go because I feel great and my clothes fit fine. Do you ever wonder why we let the scale number be so important to us....
