An easy and inexpensive dinner

What do you do when you have a bag of fresh green beans you mom gave you over the weekend? Make up a fun recipe to use them in.
Chicken with Green Beans in Tomatoes
This was a real easy dish just put all the ingredients in a foil pack into a 450 degree oven and bake 20 mins.
1 chicken breast cut into strips
2 cups fresh green beans trimmed
1 can tomatoes (or fresh ones frozen and reheated and cooked down - too many tomatoes in the summer months)
Salt, pepper and oregano to taste.

Served with a little parm cheese on top and a baked sweet potato, it was a nice and filling meal.

On my love of fall tastes, today had to have something since the last few days had lattes... so I brought some roasted pumpkin seeds to work!
I love that these are so easy to make. What is your favorite way to eat pumpkin seeds? I just add a little salt!
