Cooking like crazy

Hubby was at football practice the other night so while I was making dinner, I started on some other cooking projects.

First dinner was “Fish” Tacos. I say “fish” because Hubby does not like fish so we use fish sticks (he will eat those for some reason)

The station is set

We had onion, carrots, 2 types of cheese, rice, black bean hummus, lettuce and spicy aioli. 

Mine had carrots, onion, hummus, parm cheese, lettuce, and aioli. It was a strange combo but the flavor was really great.

While that was cooking, I was working on some cookies for a party on Friday (post to come)

And finally PUMPKIN SCONES! I found a recipe on Eggs on Sunday that i changes a bit to suit what I had at home.

1 cup all purpose flour

1 cup whole wheat flour

2 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp allspice

1/4 tsp ground ginger

1/2 cup pumpkin puree

1/4 cup melted butter

1/2 cup light soy milk

3 TBSP sugar free maple syrup

1 tsp vanilla

First the dry ingredients:

Then add the wet and combine:

Flour the counter then place the dough down and knead slightly then press to form a 1 inch thick disk. Cut the disk into 8 pieces and bake at 425 degrees F for 15-18 minutes. Although mine do not look perfect,

at only 180 calories they are much better for you then the Starbucks ones (although I love the Bucks!) and they taste pretty good too!
