We had some leeks leftover from a chicken dish I made when the in-laws where in for Hubby’s birthday, so I had to find a way to use them. Hubby is a huge hash fan so when I found a leek-hash recipe I knew it should be a winner. There is my hash cooking:
You take 1 large or 2 medium potatoes and shredded then with a grater. Then take 1 leek and slice it in thin half moons. Place both the leek and potato in ice water to rinse. Dry them out, then mix with 3 TBSP flour, nutmeg, salt and pepper to taste. Place some oil in your pan ( I used olive oil) and place the mixture in. Allow to cook about 5 minutes on each side until you have nice browning. Serve along side your favorite protein.
