I accidentally picked up parsley instead of cilantro at the Wegmans the other day! So I had to think of something to do with all this parsley when suddenly it hit me....PESTO! I love pesto but Hubby not so much a fan, so I don't normally make it, but when you have parsley you do what you need to not waste (hehe).
Into the blender went my parsley and olive oil
I then added garlic and walnuts. I never have pine nuts on hand but realized that walnuts work just as well. After it is all mixed up I put them into mini muffin cups and into the freezer they go. Let it sit overnight and
PESTO CUPS!
